I Had Ichiran Ramen for the First Time in Years

It’s been years since I last had Ichiran. As you get older, you tend to avoid ramen, but sometimes the craving hits. I suddenly wanted Ichiran’s ramen, so I headed to their Shimbashi location.

Ichiran is a nationwide chain now, but my first experience was during a business trip to Tenjin. I asked the front desk of my business hotel for a ramen recommendation, and they suggested Ichiran. Back then, you could only find it in Kyushu.

I was amazed by the unique setup, with individual dividers and a distinct ordering process. After returning from that trip, I proudly shared the story of this unique ramen place as a bit of travel bragging.

Years later, Ichiran rapidly expanded into Tokyo, which surprised me. Now it’s a place you can find almost anywhere, but back then, it was a rarity.

I bought my meal ticket at the entrance and took a seat. On the order sheet, you can specify things like flavor strength, richness, and garlic amount. I submitted the sheet and waited for the ramen.

If you want more noodles, you can order “kaedama” (extra noodles). You can buy the ticket in advance, or just use the back of your chopstick wrapper to place the order. When you order kaedama, you hear the sound of chanchiki (a traditional chime).

Ramen. I went with a lighter flavor.

I held back on the extra noodles but ended up finishing all the broth—a bit much. I’ll work on the diet starting tomorrow.

When I arrived, I was seated right away, but by the time I left, there was a line outside. Ichiran is still a popular ramen spot.
